Rib Roasts are sold by the bone with each bone feeding about two people. We can provide your roast whole for holiday carving or Trim & Truss the meat for you. By removing the meat from the bone and tying it back on, kept in place with butcher’s twine, your post-roast carving will be a breeze. ($30/lb – each bone is 2-3 lbs)

Made from Llano Seco hind quarters, these guys heat up easy for serving, and slice beautifully. Leftovers cook up great for the morning after with eggs and toast, or on a post-holiday sandwich.
